Too bad coffee shops every where aren’t doing this, because coffee and gelato are such a perfect combination. Owner, Colby Bennett, originally from Wichita Falls, TX, recently moved to Stillwater, CO – and he has opened his coffee company Blue Spruce. The standard sandwich menu will be available amongst fresh brewed coffee, but home made gelato will also be in the mix.
Every day, the gelato is made fresh , using Italian equipment of course. The recipe was actually gifted to the coffee shop from a friend who own Gelatiamo (an authentic Italian Gelateria). Baked goods and catering options are also available for customers, but oh the gelato!
The owner also plans to offer live music, performed by local artists, saying “The live music will add to the atmosphere and give people something to do besides go to the movies.”
When asked about the name, Bennett explains that his intentions with the shop were to give a mountain feel, but also capture the vintageness of the area. He said “I saw the Bruce Spruce tree and saw it was symmetrical, unique, and the fact that it was colorful and blue, and stood out amongst all the other trees. It was all just kind of perfect.”
“It was a 100 percent start up from the ground up…with passion of ingredients and products and atmosphere and creating an experience for the customer.” says Bennett.
Again, what a perfect combination! We hope to see some more locations popping up in the near future.
